We have a plaza that houses Wal-Mart and a strip mall of other restaurants and stores. The strip mall is owned by Wal-Mart and they're responsible for pumping the grease traps tied to the strip mall every quarter. In the past, grease permits were handed out to the individual restaurants within the mall but wouldn’t it make more sense to draft a permit for Wal-Mart instead? Considering they’re the ones solely responsible for making sure the grease is pumped.

I'd appreciate some feedback on this if anyone else has dealt with this situation.

We have a similar situation where the property management company has the responsibility of pumping the interceptors that are shared by multiple restaurants. While we don't permit our food service establishments, we go to the management company for records for the two shared traps and have it documented in our database that they (mgmt company) are the responsible party.

Are the grease traps shared or does each restaurant have their own? Do the tenants (specifically restaurants) have any language in their lease agreements about grease trap servicing or how it was established that WalMart was responsible for maintaining them?  If there's language about grease trap maintenance responsibility, perhaps work that into their permit(s)?
